You can ship macOS devices directly to users. You can use either of these enrollments for large numbers of devices without ever touching them. You can set up Intune enrollment for macOS devices purchased through Apple's Apple Business Manager or Apple School Manager. Wherever that is shown, it now uses Automated Device Enrollment.
Until such changes are complete, you'll continue to see Device Enrollment Program in the Intune portal. Intune is in the process of updating the Intune user interface to reflect that. Apple recently changed from using the Apple Device Enrollment Program (DEP) to Apple Automated Device Enrollment (ADE).
